Why whole grains?
Baking with whole grains for me means telling a story of how the flour we use is part of cultural heritage; of how pastry can be political; how breads are agricultural; and how our daily sustenance has just as much to do with soil health, community resilience, and beauty, as it does with making a tasty treat. Our modern loss of grain biodiversity is striking. However, many outstanding farmers and millers are counteracting this by revitalizing saved seeds from ancient varieties, many of which have long laid dormant in gene banks around the world. Join me in celebrating biodiversity and celebrating farmers who are giving heritage grains a new life! Let's bake the world we want to live in.
